If I undereat and suddenly starts eating the right "amount" what will happen?

As said, as long as your eating maintenance calories you won't see any real gain in weight. The only real caveat is that when you come off a caloric deficit, the body will go up a small bit of weight as it refills glycogen stores and water in the muscles as well as added bulk in the intestinal track from eating more. It's totally normal though many people freak out when it happens.
