I keep hearing that Infinite "has their own color"

I think a lot of it has to do with their vocals--how they fit together in their songs and harmonize and contrast each other. They do have that 80's synth thing going on, but their voices being distinctive is what gives their music an edge as opposed to the songs Sweetune writes for other boy groups. It's kind of like how Nine Muses' songs have a different feel from Kara's in much of the same way. 

 

A lot of boy groups tend to sound monotonous when they sing together because there isn't much difference in vocal color between the members (or the members of other groups). Infinite has a few members with voices that aren't quite as common, especially Sunggyu's and Sungjong's. 

 

Also, if you get past their title tracks and dig a little deeper you'll find that Infinite's discography is chock-full of songs that aren't generally found in kpop anymore, or rather the approach that they use isn't quite found in kpop anymore. In a way Infinite resemble the boy groups of the 90's, but what's interesting about Infinite is that they incorporate Korean elements, whether it be sounds or lyrics, while keeping their style modern. I think 'The Chaser' was the best example of this.

 

It's better if you listen to their songs to understand it more. I, who have been a fan for almost three years, can't really explain it myself. You should check this video out as an example and listen for the similar elements in the songs-- they all sound distinctly Infinite even if the songs themselves may not be (confusing statement, but it works for me).
