I've been keeping an eye on JeongMi from the start but nobody seems to ship them 

Jungyeon is my bias so I always pay attention to her especially and she's so much softer, gentler, and generally sweeter around Mina. Jungyeon is a sweet and kind person but she definitely as a very soft spot for Mina. Whether it's anything further than a soft spot is definitely unknown, but I can at least say with confidence that Jungyeon has the biggest soft spot for Mina than for anyone else in Twice.
