Although it's rare, it happens. if pangolins were involved, then, that's 2 jumps inbetween species which is even rarer. Also, sars was also potentially caused by bats. Technically, something already happened like this once. So it's not exactly why is it happening now, as it can happen anytime. It's more like when is the next outbreak btw its not "eating" apparently, the butcher probably came into contact with the bat's bodily fluids and got infected.
